“The Elvis” Peanut Butter & Banana With Bacon


Servings 1-2
Ingredients:
  • 8 Sesame Crisps
  • 1 banana, thinly sliced
  • 1/2 cup natural peanut butter (creamy or crunchy — whichever suits your fancy!)
  • 3 slices bacon, cooked and crumbled
  • Chopped salted peanuts (optional)

Directions:
Place crisps on a smooth, flat surface such as a cutting board or countertop. Spread each crisp gently with your favorite peanut butter, then top with banana slices. Sprinkle with bacon; garnish with salted peanuts, if desired.

Tip:
Omit the bacon and this is a perfect healthy afternoon snack for a hungry bunch of small ones! If the potential mess doesn’t scare you off, set out the bananas and peanut butter and let the little ones assemble their own treats.

If you are assembling a lot of these, consider putting your peanut butter into a zip-top bag. Seal the bag then snip off a tiny corner to use as a makeshift pastry bag. This makes repeated assembly much easier than using a knife to spread the peanut butter on each crisp! If you are piping the peanut butter, you can actually place the banana slices on the crisp first and top with PB — otherwise, it’s too difficult to spread the PB on top of the banana without destroying your efforts.

If you really want to up the ante, consider garnishing with chocolate sauce, coconut or even a few flakes of luxurious sea salt such as Maldon to elevate this simple treat.
