Smoked Salmon Dip


Servings 6-8
Ingredients:
  • 1 box Whole Grain Crisps
  • 1 Tbsp. butter
  • 1 large shallot, minced
  • 8 ounces cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1 Tbsp. finely chopped dill
  • 1 Tbsp. lemon juice
  • 1 tsp. lemon zest
  • 2 Tbsp. capers
  • ½ tsp. salt
  • ½ tsp. freshly ground pepper, to taste
  • 6 oz. smoked salmon

Directions:
Melt butter in a small saucepan; add shallots and sauté until soft, about 2-3 minutes. Meanwhile, use an electric mixer to whip cream cheese and yogurt. Add shallots, dill, lemon juice, zest and salt and pepper. Fold in smoked salmon. Makes about 2 cups dip.
