Fully Loaded New Potatoes
- 24 34° Toasted Onion Crisps
- 6-8 small red potatoes
- ½ cup sour cream or Greek yogurt
- 1 cup finely shredded sharp cheddar
- ½ cup chopped cooked bacon
- 2 Tbsp. minced chives
Steam or boil potatoes until tender and sliceable, about 15-20 minutes, depending on size. Cool until touchable, thinly slice and layer on a cracker. Top with a dollop of sour cream and a sprinkle of cheddar, bacon and chives.
Pop under the broiler to melt the cheese, if desired.
