Wine Poached Pears
- 34 Degrees Original Crisps
- 2 cups dry red wine
- ¼ cup sugar
- ½ cup fresh orange juice
- 1 cinnamon stick
- ¼ tsp. cardamom
- 1 (8 oz.) container Mascarpone cheese, for serving
- 6 oz. bittersweet chocolate shavings, for serving
In a medium saucepan combine all ingredients except pears. Bring to a boil, reduce heat and simmer for 10 minutes. Add pears, cover and simmer for 30 minutes, turning pears so all sides become pink. Remove from heat, transfer pears to a bowl and cover with wine mixture. Cover bowl with plastic wrap and refrigerate overnight. To serve, top each crisp with a piece of thinly sliced pear, a dollop of mascarpone and bittersweet chocolate shavings.
To make chocolate shavings, run a vegetable peeler along the edge of a bar of bittersweet chocolate.
