Watermelon & Feta with Fresh Mint
Ingredients
- 24 Cracked Pepper Crisps
- 24 baby spinach or arugula leaves
- 6 oz. fresh watermelon
- 3 oz. feta, drained if necessary
- Fresh mint leaves, chopped
- Cracked black pepper
Directions
Place the crisps on a serving platter. On each crisp, place a baby spinach or arugula leaf. Top with a slice of fresh watermelon and a few feta crumbles. Garnish platter with sliced fresh mint and cracked black pepper. Serve immediately.
Alternatively, you can arrange a beautiful platter with small crisp-sized pieces of sliced watermelon, chunks of feta and chopped mint. Set out a couple of different varieties of crisps and let your guests assemble the nibbles themselves!
Tip
Because watermelon has so much moisture, you can use the spinach or arugula leaf as a barrier.
If you’re not a fan of feta, consider using another sharp, strong cheese — an aged goat cheese would work, as would an artisanal blue. The contrast of the sweet watermelon and the strong cheese is what makes this work, so don’t use a mild cheese as it will get lost in the shuffle.
