Simple Roasted Red Pepper & Almond Dip

Servings 6-8
  • 1 box Original Crisps
  • 1/3 cup whole raw almonds
  • 1 cup roasted red peppers, drained
  • 1 tsp. red wine vinegar
  • 1 tbsp. shallot or red onion
  • 1 clove garlic (or to taste)
  • 1 tbsp. olive oil
  • Kosher salt and freshly-ground pepper

Spray a large skillet with non-stick cooking spray and gently toast the almonds over medium heat until lightly browned and fragrant, about 10 minutes. Remove to a plate and let cool. In the work bowl of a food processor, finely process the cooled toasted almonds. Add peppers, shallot and vinegar and process until smooth. Taste for seasoning and add salt, pepper and hot sauce as needed. Serve warm or at room temperature with Natural Crisps.

Toasting nuts really brings out their flavor and adds a lot of extra depth to simple recipes like this. Be careful, though — nuts either in the oven or on the stove can go from perfectly toasted to charred in a matter of seconds so always keep a close eye on toasting nuts!
