Roasted Turkey With Smoked Gouda & Mustard
- 8 Cracked Pepper Crisps
- 2 oz. roasted turkey, thinly sliced and cut into 1-inch pieces
- 2 oz. smoked Gouda, thinly sliced and cut into 1-inch pieces
- Dijon or honey mustard
Arrange crisps on a serving platter. Place a square of turkey on each crisp, followed by a square of Gouda. Stack approximately three slices each of turkey and Gouda on each Crisp, then finish with a drizzle of Dijon or honey mustard.
This makes a wonderfully healthy packed lunch for either kids or adults. Pack the Crisps, the turkey and the Gouda separately, then assemble at mealtime. Tiny one-use deli mustard packets are perfect for tucking into the lunch bag!
This recipe has the potential for amazing creativity — try smoked ham with Swiss or roast beef with pepper jack. Use horseradish mustard or chipotle-lime mayo for added interest. Add a few leaves of baby greens for color and crunch. Who says a packed lunch has to be boring?
