Roasted Parsnip Hummus
Servings 6-8
Ingredients:- 1 box Sesame Crisps
- 1 pound (about 3 large) parsnips, peeled and cubed
- 3 large cloves garlic
- ¼ cup tahini
- ¼ cup olive oil, plus additional for baking parsnips
- 2 Tbsp. fresh lemon juice
- ½ -1 cup warm water
- Salt and pepper to taste
- Red pepper flakes, for serving
Directions:
Preheat oven to 400 degrees. Place parsnips and garlic on baking sheet and drizzle with a bit of olive oil. Toss to coat. Sprinkle with salt and pepper. Bake until very soft, about 35-40 minutes. Put in a food processor or blender along with tahini, olive oil, lemon juice and ½ cup water. Puree until smooth, adding more water if necessary to get a creamy, spreadable consistency. Season with salt and pepper. Makes about 1½ cups.
