Pulled Pork BBQ With Fresh Cabbage
- 24 Cracked Pepper Crisps
- 2 oz. shredded cabbage (red, green, Napa or a combination)
- 4-6 oz. prepared pulled pork barbecue
- Fresh scallions, for garnish
- Additional barbecue sauce, for garnish (optional)
Place the crisps on a serving platter. Arrange a little tangle of shredded cabbage on each crisp, enough to create a solid base for your tender, meaty pulled pork. Top each crisp with a few delicious chunks of meat, and garnish with sliced scallions and perhaps a little extra squeeze of sauce, if you so desire. Enjoy immediately!
Don’t feel bound by the pulled pork mentioned here…you could use smoky brisket or savory chicken or just about any regional barbecue variation you can think of! Be aware that the cabbage provides not only fresh textural crunch but also a helpful barrier between sauce and cracker, so don’t skimp on it — keep your crisps crisp! Serves 6–8 as a delicious snack or perhaps a tailgate treat.
