Pimiento Cheese With Bacon
Ingredients:
- 1 box Cracked Pepper Crisps
- 8 oz. sharp white cheddar, coarsely grated
- 1 small jar (4 oz.) pimentos, drained
- About 1/2 to 3/4 cup good-quality mayonnaise (preferably homemade, but Hellmann’s/Best Foods otherwise!)
- 1 tsp. Dijon mustard
- 1 tsp. Worcestershire sauce
- 1/2 tsp. cayenne pepper and/or hot sauce, to taste
- 3 strips bacon, cooked, drained and crumbled
- 1 bunch scallions, finely chopped
- Kosher salt and freshly-ground black pepper
- Optional: diced red onion and/or diced red bell pepper
Directions:
In a small bowl, whisk together 1/2 cup mayonnaise, mustard, Worcestershire sauce and cayenne or hot sauce. Fold in grated cheese, pimentos, half of the bacon and half of the scallions. Combine well with a wooden spoon or rubber spatula; feel free to add additional mayonnaise if you prefer a creamier texture. Taste for seasoning and adjust as necessary with hot sauce, salt and/or pepper. Serve topped with remaining scallions and more bacon bits. This dip is best served at room temperature with light and crunchy Crisps and a selection of fresh raw vegetables! Try making little pimento cheese sandwiches with your Crisps or use the pimento cheese as a filling for celery sticks.
