Hummus With Tomato & Cucumber
- 34° Rosemary Crisps
- 2 oz. homemade or purchased hummus
- 1/4 English Cucumber, cut into 8 thin slices
- 4 cherry or grape tomatoes, halved
Arrange Rosemary Crisps on a serving platter. Place a cucumber slice on each Crisp, then top with a tiny spoonful of hummus and a cherry tomato half. Enjoy immediately!
This is a terrifically healthy after-school snack for kids — and though you can certainly make your own hummus, the wide variety of top-notch hummus brands available make it even easier. For variety (or when tomatoes aren’t in season) try thinly sliced red bell pepper, shredded carrot or crunchy celery instead of tomato on top!
