Honey Roasted Rhubarb Bites
- 24 34° Original Crisps
- 1 lb. fresh rhubarb
- 1 orange, juice and zest
- ¼ cup honey
- ½ cup Greek yogurt
- 2-3 Tbsp. balsamic reduction and/or honey
Preheat oven to 450°. Cut rhubarb into 1-inch pieces and place in a 13x9 baking dish. Add orange juice, zest and honey and toss to coat. Roast for 15-20 minutes until rhubarb is soft but not mushy.
To serve, cut rhubarb into bite-sized pieces. Top each cracker with a dollop of yogurt, a piece of rhubarb and a drizzle of balsamic (savory) or honey (sweet).
Leftover rhubarb is great served with yogurt or on ice cream.
