Goat Cheese With Caramelized Onion & Fresh Thyme
Servings 6-8
Ingredients:- 24 Cracked Pepper Crisps
- 2 large yellow onions, diced
- 1 tbsp. butter
- 1 tbsp. olive oil
- Kosher salt and freshly-ground pepper
- 4 oz. artisanal soft goat cheese, crumbled
- 4 sprigs fresh thyme
Directions:
In a large, shallow sauté pan, heat the butter and olive oil over medium heat. When lightly foamy, add the sliced onions and a good sprinkling of salt and pepper. Gently cook this mixture over low heat until the onions are soft and sweet and golden-brown. The caramelization should take about 30 minutes; avoid stirring too often as part of the magic happens when the onions are left to cook undisturbed. You may add a little water if it seems as though the onions are sticking to the pan. To serve, place crisps on a serving plate. Place a small tangle of caramelized onions on each crisp and follow with a few crumbles of goat cheese. Finish with a small amount of fresh thyme and a few grinds of fresh black pepper. Enjoy immediately.
Tip:
Onions have a great deal of natural sugar and when cooked slowly over low heat those sugars caramelize, resulting in richly-flavored sweet-savory goodness.
