Goat Cheese, Pomegranate & Rosemary


Servings 1-2
Ingredients:
  • 8 Cracked Pepper Crisps
  • 2 oz. good-quality soft goat cheese, at room temperature
  • 1/4 cup pomegranate seeds
  • 2 tbsp. honey
  • Cumin, black pepper and/or cinnamon, to taste

Directions:
Place crisps on a plate. Top each crisp with a little dollop of goat cheese. Garnish with pomegranate seeds and a light drizzle of honey. Sprinkle with cumin, cinnamon or black pepper…experiment to find your favorite taste combination!

Tip:
Pomegranate seeds are much easier and cleaner to remove under water. Cut pomegranate in half through its hemisphere. Fill a bowl or pan with cold water and turn pomegranate half inside-out while holding under water. Gently remove seeds from white inner membrane. Repeat with second half; strain seeds and store in fridge until ready to use, up to 4 days. This technique greatly reduces the amount of staining that occurs when pomegranate juice splashes around your kitchen!
