Goat Cheese & Pesto

  • 24 Toasted Onion Crisps
  • 4 oz. good-quality fresh goat cheese, sliced into small cracker-size wedges
  • 2 oz. homemade or purchased pesto
  • Pine nuts or other nuts, toasted, for garnish
  • Fresh basil, for garnish

Place crisps on a serving platter. Place a slice of goat cheese on each and top with a spoonful of fresh pesto. Garnish with basil sprigs and pine nuts serve immediately.

Pesto freezes beautifully; scrape it into ice-cube trays (don’t use them for ice again!) and freeze until solid. When frozen, empty cubes into a zip-top bag and toss with pasta, soups or roasted vegetables in the dead of winter.
