Fresh Radishes With Sea Salt & Butter
- 34° Cracked Pepper Crisps
- 3-4 fresh radishes, trimmed and thinly sliced
- 2 tsp. good-quality butter, softened
- Coarse sea salt, such as Maldon
- Freshly-ground black pepper
Place the crisps on a smooth, flat surface such as a cutting board or counter. Spread each crisp with about 1/4 tsp. softened butter; top with a few radish slices. Sprinkle with coarse sea salt and black pepper.
Radishes come in many more varieties than just the classic red globes we typically find in our local grocery store. There are purple, orange, white and pink varieties, and each has its own unique crunchy, bitter and sweet flavor combination. There is even a thin, elongated version called ‘French Breakfast’ because this is such a popular morning treat in rural France. Try finding these at your local farmer’s market, or even better – grow your own! Radishes are one of the easiest vegetables to grow and can be planted and harvested early in the season.
