Feta & Salsa Fresca

  • Feta or cotija, cut or broken into small cracker-sized pieces
  • 1 pint ripe cherry tomatoes, diced 1/4 red onion, diced
  • 1 lime, Zest and juice
  • Fresh cilantro, chopped
  • Kosher salt, cracked pepper and hot sauce

In a small bowl, combine the tomatoes, onion, lime zest and juice and cilantro. Season with salt, pepper and hot sauce to taste and allow to sit for 10 minutes so flavors can blend. Taste again and adjust seasoning as necessary. Top cracker with a spoonful of salsa Fresca, sprinkle cheese on top and salt, pepper and hot sauce to taste.
