Buffalo Chicken Bites

  • 1 box Sesame Crisps
  • 1 tbsp. butter
  • 1 tbsp. olive oil
  • 1 boneless, skinless chicken breast, cut into bite sized pieces
  • Louisiana hot sauce, to taste (such as Frank's Red Hot)
  • 1/2 cup blue cheese dressing
  • 1/3 cup minced celery

Heat oil and butter in a small saucepan. Add chicken and saute over medium heat until lightly browned, 2-3 minutes. Add 3 Tbsp. hot sauce and continue to cook for 5 minutes. Remove from heat. Toss with additional hot sauce. Top each crisp with chicken, drizzle with blue cheese and sprinkle with diced celery. Makes about 30 crisps.
