Avocado & Shrimp Bites


Ingredients
  • 2 dozen Original Crisps
  • 2 dozen (51-60 count) shrimp, peeled and tails removed
  • 1 Tbsp. fresh lime juice
  • 2 tsp. chili powder
  • 1/4 tsp. salt
  • 1 ripe avocado, cubed
  • ½ cup sour cream or Greek yogurt
  • 24 cilantro leaves, for garnish
  • Lime wedges, for garnish

Directions
Arrange crisps on a platter. Boil shrimp for 2-3 minutes until pink and opaque. Chill in an ice bath. Drain and toss shrimp with lime juice followed by chili powder and salt. Top each crisp with a ½ tsp. of sour cream or yogurt, shrimp, avocado, cilantro leaf and a squeeze of lime. Makes 24 appetizers.
